Put water on to boil for rice. Meanwhile:
Spray bottom of wok or large frying pan with cooking spray
Add peppers and onions - cook until soft
Add chicken - cook till no longer pink
Add enough pineapple juice to cover bottom of pan
Add pineapple and chashews (if desired) stirring gently
Add water chestnuts and continue stirring
Shake bottle of Jed's Sweet & Sour dressing and pour over mixture in pan
Stir until heated through
Serve over bed of brown rice and enjoy!
